Spicy Asian Chicken Skillet Meatballs!

These YUMMY bites pack a spicy punch and are incredibly easy to make!

This recipe is GREAT for meal prep because you can cook the meatballs ahead of time, and keep them frozen until you need them!

Serve these over a bed of jasmine rice for a workout day or add them to a giant salad on rest days!

Meatball Ingredients:

  • 1 lb. Extra Lean Ground Chicken – *For a “juicier” and fattier meatball, go with 93/7% OR you can mix both!
  • 1/2 cup Ezekiel crumbs (~1.5 Ezekiel bread slices) OR 1/2 cup breadcrumbs of choice
  • 1 large whole egg
  • 1/2 cup diced green onions
  • 2-3 tsp Ginger Powder
  • 2-3 tsp Garlic Powder
  • 2 tsp Red Pepper Flakes (more if you prefer EXTRA spicy!)
  • 1 tbsp Toasted Sesame Seeds – *optional
  • Olive Oil Cooking Spray

Sauce Ingredients:

  • 2.5-3 tbsp Honey or Coconut Nectar
  • 3 tbsp Braggs Liquid Aminos – *healthier and lower in sodium as compared to Tamari or Soy Sauce
  • 3 tbsp Apple Cider Vinegar

  • Med. to Large Skillet Pan w/lid
  • 1 large & 1 small mixing bowl
  • 1 giant sheet of parchment paper OR 1 large flat plate

  1. In your large mixing bowl, mix together ground chicken, bread crumbs, egg, green onions, ginger powder, garlic powder and red pepper flakes. Mix well.
  2. Using a tbsp measurer, scoop 1 heaping tbsp from chicken mixture and place on your parchment paper or large plate. Repeat this 12-16 more times leaving space in between your mounds.
  3. Prior to rolling the meat mixture into small balls, spray the tops of each mound with Cooking spray so the batter does not stick to your fingers. *Can omit this step.
  4. Grab your small mixing bowl, mix together Honey, Braggs liquid aminos, Apple Cider Vinegar and whisk until smooth. This sauce will NOT be thick in consistency. Set aside.
  5. Coat skillet with Olive Oil Cooking spray and turn on to medium heat. Add all of the meatballs to the skillet and cover with lid.
  6. After 4-5 minutes, turn meatballs over in the skillet and add the sauce mixture. Make sure to coat each meatball with the sauce.
  7. Allow the meatballs to cook for another 5-6 minutes until the sauce mixture begins to steam and thicken up. Be careful not to overcook the meatballs because the chicken can dry out very easily!
  8. Once ready, remove the meatballs from the skillet and add toasted sesame seeds!
