Skinny Blueberry & Banana Oat Muffins – Gluten Free

For all you sweet-snackers out there, this recipe is perfect for you! Keep your calories low with these YUMMY Muffins!

Muffin Ingredients:

  • 2 cups GF Old Fashioned Oats
  • 3/4 cup Frozen or Fresh Blueberries
  • 1 medium Banana
  • 3 tbsp Chopped Walnuts (optional)
  • 3 large whole eggs
  • 2 cups Unsweetened Almond Milk
  • 3 tbsp Swerve Granular (Sugar Substitute) – found @ Whole Foods or Publix
  • 1.5 tsp Baking Powder
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

 

Bakeware:

  • 2 mixing bowls
  • 1 12-ct. Muffin Tin

 

Directions:

1. Preheat oven to 325F.

2. In one mixing bowl, add the following ingredients: oats, blueberries, banana & walnuts. Mix well, then set aside.

3. In another mixing bowl, add the the following ingredients: eggs, almond milk, sugar substitute, baking powder, vanilla extract, cinnamon, nutmeg. Mix well than add to 1st mixing bowl.

4. Coat your muffin tin with Cooking Spray and distribute muffin mixture evenly to make 12 muffins.

5. Bake muffins for approx. one hour. If you’re oven can’t be set at 325F, then bake at 350F for approx. 45 minutes.

Protein: 4 grams / Carbs: 15 grams / Fat: 4 grams
