Pork Stir-Fry

Crunched on time and in need of a tasty & low-carb meal?! Then you’ve GOT TO try this recipe!!!

I rarely cook pork, so when I do, it is has to be SIMPLE!

And not only is this dish PACKED full of protein, but it’s ready in less than 15 minutes! 

 

Cuisine: Entree, Ketogenic, Low Carb, Grain Free

Pork Chop Ingredients:

  • 3 or 4 (4 oz.) Boneless Pork Chops, sliced into small strips (excess fat removed)
  • 2 tsp. Corn Starch
  • 1.5 tbsp Braggs Liquid Aminos or Coconut Aminos*

 

Sauce Ingredients:

  • 1.5 tbsp Braggs Liquid Aminos or Coconut Aminos*
  • Fresh lime juice  from 1/2 lime
  • 1/2 tsp Honey or Coconut Nectar**
  • 1 tsp Toasted Sesame Oil
  • 2 tsp Rice Vinegar (found in Asian isle at Whole Foods)

 

Stir-Fry Vegetable Ingredients:

  • 1 large red bell pepper, sliced into 1/2″ strips
  • 1 large yellow bell pepper, sliced into  1/2 “strips
  • 1/2 bag Trader Joes snow peas (any other brand is just fine!)
  • 2 tsp grated ginger (found in Asian isle at Whole Foods)
  • 2 tbsp fresh garlic or garlic powder

 

Cookware:

  • 2 mixing bowls
  • 1 large wok or skillet
  • Small dish

 

Notes:

*You can find Coconut Aminos/Braggs Liquid Aminos in the Asian Isle at Whole Foods. This is a healthy alternative for Soy Sauce.

**Add more honey if you want to cut the “saltiness” of the healthy soy sauce.

 

Directions:

1. In a mixing bowl, add the Pork Chop ingredients, mix well, then set aside.

2. In another mixing bowl, add the Sauce ingredients, mix well, then set aside.

3. Coat your wok or skillet with Olive Oil Spray and turn to med-high heat. Add Pork Chops to skillet and cook for 6-8 minutes, turning them half way through to make sure they are evenly cooked and brown (not pink). Then set aside on a dish.

4. Add the Stir-Fry Vegetable ingredients to the wok or skillet, turning the heat to low. Pour the Sauce ingredients over the vegetables and cook for 2-5 minutes.

5. Return the cooked pork to the wok or skillet and mix well! Serve and enjoy!
