Italian Turkey Meatballs

These are ohhhh so yummy Italian Turkey meatballs served over a bed of spiralized cucumber dressed with balsamic, salt and pepper! Perfect for a rest day because it’s ridiculously low in carbs and full of protein! Follow this simple recipe so that you can successfully prep your food with ease! And feel free to swap your side with other fun veggies!


– 2.5lbs pounds lean ground turkey or chicken
– 2 teaspoons dried oregano
– 2 tablespoons freshly chopped Italian parsley
– 1 teaspoon black pepper
– Kosher or sea salt to taste
– 1/2 teaspoon crushed red pepper flakes
– 2 tablespoons minced garlic
– 1 cup whole wheat panko*
– 1 cup parmesan cheese, freshly grated
– 3 large whole eggs


1. Preheat oven to 350F
2. Combine all ingredients in a large mixing bowl and mix well (I used my hands).
3. Line a baking sheet with parchment paper and coat with Cooking spray.
4. Shape mixture into 1″ meatballs and place on baking sheet.
5. Bake for 22-25 minutes until fully cooked OR you have option to cook them in a skillet for 15-18 minutes (turn every couple of minutes so they don’t burn).
