Honey-Lime Meatballs with “Faux-Fried” Rice

Once you pop…. you won’t be able to stop! Seriously folks, this simple recipe is full of flavor without the excess fat!

The entire meal can be ready in less than 30 minutes and is perfect for left-overs!


Meatball Ingredients:

  • 1 lb. 96/4 Lean Gound Beef (may use 93/7)
  • 2 large egg whites & 1 large whole egg
  • 1 cup Ezekiel crumbs (may use regular bread crumbs)
  • 3 tsp. Worcestershire
  • 1 tsp. Crushed Red Pepper Flakes
  • 1/2 cup green onion (diced)


Meatball Sauce Ingredients:

  • 2 tbsp fresh lime juice (from 1 lime)
  • 3 tbsp Liquid Braggs Aminos OR Coconut Aminos (I went half & half)
  • 3 tbsp Honey


“Faux-Fried” Rice Ingredients:

  • 1 bag Cauliflower Florets
  • 1/2 red onion (diced)
  • 1/4 cup green onion (diced) OR bell pepper
  • 2 tbsp Liquid Braggs Aminos OR Coconut Aminos (I used half & half)
  • 1 tbsp Cumin



  • 2 large skillets or saute pans
  • Food Processor
  • 2 large mixing bowls (for meat & cauliflower)
  • 1 small mixing bowl (for sauce)


Meatball Directions:

  1. In one mixing bowl, combine all meat ingredients and mix well. Form your meatballs and set aside. My batch made 26 bite-size pieces.
  2. In a separate small mixing bowl, combine all sauce ingredients and whisk until honey is evenly distributed. The sauce will not be thick in consistency. Pour sauce slowly over all meatballs making sure that all meatballs have been coated. There will left-over sauce. Set this aside.
  3. Coat one saute pan with Olive Oil Spray and turn to low/med heat. Add the meatballs and cover with lid. Let meatballs cook for about 5 minutes. Then proceed to flip them so they are evenly cooked. At this time, add the extra sauce that was left-over in your mixing bowl. Cover the meatballs and let cook for 6-8 more minutes. Once fully-cooked, turn heat to low until ready to serve!

  1. After meatballs have been turned to low/simmer. Add cauliflower florets to food processor and pulse until completely “riced”.
  2. Coat second saute pan with Olive Oil spray and turn to low/med heat. Add red onions and green onions. Let them “sweat for a couple of minutes, and then add the “riced” cauliflower.
  3. Add Cumin (or preferred spices) and Aminos and continue to toss the rice until it has browned slightly. Cook for approx. 8-10 minutes.
