Gluten Free PIZZA Bites – Vegan Optional

 I don’t care who you are, Pizza is a magical food that hits every taste bud.

So, why not pack all of those yummy flavors into the easiest bake-able muffin… WITHOUT THE GUILT!

This recipe is completely Gluten-Free and can be personalized for Vegans too!

And just a tip: the Secret is in the SAUCE! 


Muffin Ingredients (Non-Vegan):

  • 3 Gluten Free Tortillas/Wraps of Choice
  • 1/2 cup Trader Joes Lite Mozzarella Shredded Cheese
  • 1 cup Homemade Marinara – recipe posted in Zucchini Boat Recipe
  • 1/4 cup Parmesan
  • 1 tbsp Italian Seasonings (oregano, basil, garlic)
  • 1/2 medium onion (diced & sauteed) – optional
  • 1 cup spinach (sauteed) – optional
  • Olive Oil Cooking Spray



  • Vegan-Friendly: Use Daiya Vegan Mozzarella Cheese & No Parmesan
  • Tortillas/Wraps: I suggest a soft wrap so that you can easily place it in the muffin tins. Try Rudi’s Gluten Free Wraps (Whole Foods) Or Toufayan Gluten Free Wraps (Publix).
  • Marinara: Use a low sodium Pizza sauce or Marinara. Be mindful of the sodium and sugar in these ready-made sauces because calories will quickly add up.
  • Veggies: I personally love spinach and onions. But you can try any veggie that you would normally like on a pizza! Make it your own!



  • 12 ct. Muffin Pan
  • Empty 14-16 oz. can OR cup (to make the perfect circle) – I used an empty diced tomatoes can
  • Small Mixing Bowl



  1. Preheat oven to 425 and coat your 12 ct. muffin tin with Olive Oil spray.
  2. Using your empty can (or cup) to make 4 medium circles out of each wrap (should make 12). You will need to press firmly until it cuts through the wrap. Toss leftover wrap.
  3. Firmly press each circle into each tin space. The circle does not have cover the entire side of the tin. Should just fit snug. 
  4. In small mixing bowl, add your marinara of choice, add Parmesan (optional) and Italian seasonings.
  5. Begin layering each circle with sauteed veggies (optional) and 1-2 tbsp of marinara sauce.  Then evenly distribute and top with the shredded cheese.
  6. Bake for 10-15 minutes or until cheese is melted and lightly browned.
  7. Remove from oven, let cool and they are ready to serve

*They taste best when they are WARM & GOOEY!
