Crockpot Salsa Chicken

If you’re on the verge of being “chickened-out”, then you have GOT to give this recipe a shot before you throw in the towel! This dish takes the cake for minimal prep time, few ingredients & TONS of flavor.  This dish is ideal for a workout or rest day! And all you have to do it set, forget it and then ENJOY IT! VOILA!

  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch strips
  • 1 cup salsa of choice (lowest in sodium)
  • ½ tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 2 tbsp minced garlic or garlic powder
  • Salt and pepper to taste
  • 1 whole white onion, peeled, and cut into ½ inch strips




Additional toppings:

  • Greek Yogurt
  • Low fat sour Cream
  • Light Shredded Cheddar Cheese
  • Avocado



  1. In a large bowl, toss all of the ingredients together, until the chicken breasts are well coated.
  2. Pour entire mixture into the crockpot and cook on low for 2-3 hours (will vary depending on crockpot), until the chicken is cooked through and the onions have softened.
  3. Serve on butter lettuce or a bed of rice and add your favorite toppings… as long as they fit your macros!
