Creamy Spinach & Artichoke Chicken… Crockpot Style!

Featuring another Savory and Flavorful Crockpot Recipe: Creamy Spinach and Artichoke Chicken! You have NO EXCUSE to not try this dish (unless you have a dairy intolerance… sorry folks). This recipe along with others that we have posted is perfect for your busy life. Just gather your ingredients, put ’em in the crockpot, set it & forget it! Planning ahead and having your meals prepped will ALWAYS keep you on track!

Ingredients for the Crockpot:

  • 4-6 Chicken Breasts
  • 8 cups (or 6 giant handfuls) of Baby Spinach
  • 1 cup Low Sodium Chicken Broth
  • 3 tbsp Chopped Garlic
  • 1/2 onion (chopped)
  • Salt & Pepper to taste

Ingredients for Sauce:

  • 3-4 tbsp Neufchatel Cream Cheese (can use Low-fat Cream Cheese instead) – room temp.
  • 3-4 tbsp Parmesan Cheese
  • 6-8 artichoke hearts (chopped) – optional

Directions:

1. (Optional) – In a saute pan on medium heat, sear chicken briefly on both insides adding salt and pepper.

2. Add spinach, chicken breast, chicken broth, onions, garlic, salt and pepper to crockpot.

3. Set crockpot for Low and cook for 2-3 hours. After one hour has passed, you may want to stir the spinach and onions to ensure that they are cooked evenly.

4. In a separate bowl, begin mixing your creamy sauce ingredients. Mix until smooth and desired taste.

5. Once chicken is ready, remove from crockpot and either place on serving platters or tupperware (if you are prepping your meals).

6. Then add the creamy sauce to the cooked chicken as you desire!

7. (Optional) Top with diced cherry tomatoes and enjoy!

*If its your workout day, then try pairing this with brown rice or whole wheat pasta!
