Creamy Chicken Pasta

Calling all Pasta Lovers!!  What’s creamy, low-fat and packed full of flavor?! This dish right here!!!

I would say this meal has been “healthified” because it 4u fitness personal training recipes pastacontains absolutely NO cream and calls for brown rice pasta instead of regular white pasta. So what’s in it?! 

Ingredients for Pasta – 

– 200g cooked & diced Chicken Breasts

– 4 oz. dry Brown Rice Penne Pasta (can swap for Shells or Fusili)

– 1 cup Spinach

– 1 cup diced Bell-Peppers & Red onions

– 1 oz. Sun dried Tomatoes 

Ingredients for Pasta Sauce – 

– 1/3 cup Nonfat Greek Yogurt

– 1 tbsp Unsweetened Almond Milk

– 1/8 cup (3tbsp) Grated Parmesan

– 1/2 tbsp Olive Oil

– Salt & Pepper to taste 

Instructions: Cook pasta according to directions. While pasta is cooking, sauté bell peppers, onions and spinach in a separate pan until cooked through. In a separate bowl, mix all sauce ingredients. Once pasta is fully cooked and drained, mix in diced chicken, cooked veggies and sauce. 

Enjoy this meal on a workout day and adjustments can be made according to your personal macros. If you are prepping ahead of time, it can be served cold the next day!
