Baked Sweet Potato Chicken Bites

Ingredients

  • 1 pound organic ground chicken - sub for turkey or pork
  • 1 large uncooked sweet potato, skin peeled and finely grated
  • 2 tablespoons coconut flour or almond flour
  • 1 egg
  • 1 tablespoon coconut oil or ghee, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • optional - 1/2 teaspoon smoked paprika and 1/2 teaspoon chipotle chile powder
  • 1/2 teaspoon salt

Cooking Utensils

  • large mixing bowl
  • air fryer or baking sheet

Directions

  1. Combine all the ingredients in a large mixing bowl.
  2. Using a tablespoon-spoon size melon ball scooper, divvy out the mixture into 24-26 bites onto parchment paper. Shape to your liking.

 

Oven-Baked method:

  1. Preheat oven to 400F.
  2. Line a baking sheet with parchment paper and baked for 20-22 minutes, flipping bites half way through.
  3. Allow to cool and serve with your favorite dipping sauce.

 

Air Fryer method:

  1. 400 for 10 minutes. Flip bites half way through.
  2. Allow to cool and serve with your favorite dipping sauce.
