Baked French Toast Muffins

Packed with fiber and low in fat, these delightful muffins are guaranteed to Curb those Carb Cravings!!!

Enjoy these muffins POST-WORKOUT or you can even double the recipe for freezable & ready-made snacks!

Baking Utensils:

  • 12 ct. Muffin Pan
  • Large Mixing Bowl
  • Whisk & Spoon

Ingredients:

  • 6 slices Ezekiel Sprouted Bread (I used a combination of Regular & Cinnamon Raisin) – cut into 1″ pieces – may swap for Sprouted Bread of Choice
  • 3 large whole Free Range eggs & 3 large egg whites – may swap whole eggs for egg whites
  • 1/2 cup Unsweetened Almond milk
  • 1 tbsp Swerve Sugar Substitute
  • 1 tbsp Light Brown Sugar (Can swap for Swerve)
  • 2 tsp. Vanilla
  • 2 tsp. Cinnamon
  • Coconut or Olive Oil Cooking Spray

 

Optional Toppings: Organic Light Maple Syrup, Diced Strawberries or Greek Yogurt


 

Directions:

  1. Preheat oven to 350F. Generously spray 8 (of the 12) cavities of the muffin pan.
  2. Add the eggs, almond milk, sugar, vanilla & cinnamon to the mixing bowl and whisk to combine.
  3. Add the bread pieces to the mixing bowl, and gently toss with a spoon to coat evenly. Let the bread pieces rest in the mixing bowl for 3 to 4 minutes, or until all of the liquid has been absorbed into the bread.
  4. Evenly portion out the soaked bread pieces among the 8 cavities. You do not have to pack them down. And each cavity should be about 3/4 full. You The bread will expand/puff while baking, but it will quickly deflate after you remove it from the oven.
  5. Bake for about 15-20 minutes until the tops are lightly golden brown. The amount of bake time will vary by the bread you choose to use, so watch closely after 15 minutes.
  6. Remove the muffins and allow to cool for 5-10 minutes. Store ’em, pack ’em up or eat them right away with your choice of Maple Syrup, berries or greek yogurt!
