6-Ingredient Chicken Fajita Bake!

Just in time for New Years Resolutions!

There are NO EXCUSES allowed when you have a simple and budget-friendly recipe like this!  

And when it comes to meal prep, this one takes the cake because you can prepare large quantities and it will last the entire week!


Cuisine: Entree, Low Carb, Gluten Free, Ketogenic


  • 1-2.5 lbs. Chicken Breast (tenderized, excess fat trimmed)
  • 1/4 cup Fajita Seasoning or to Taste (Make your own with Chili Powder, Garlic Powder, Cumin, Salt & Pepper)
  • 1-2 large Red Bell Peppers (thinly sliced)
  • 1-2 large Green Bell Peppers (thinly sliced)
  • 1 med onion (thinly sliced)
  • 1/2 cup Shredded Cheese of Choice or more!
  • Olive Oil Cooking Spray

  • 1 or 2 Pyrex Oven Safe Dishes
  • Meat Mallet



  1. Preheat oven to 375F.
  2. After you have tenderized (with meat mallet) all chicken, cut into tenders or you can leave them in whole form.
  3. Coat 1 or both pyrex dishes with Olive Oil Spray.
  4. Season Chicken with liberal amount of Fajita spices on both sides of the chicken.
  5. Begin layering: Chicken, 1/4 cup cheese, Peppers & Onions, 1/4 cup cheese
  6. Cook for approx. 35-40 minutes.
  7. Serve over more cooked vegetables for a rest day OR stuff into a tortilla for a workout day!!!
