5-Ingredient MEATY Salsa Muffins!!!

With just a few ingredients, these muffins hit the spot! Perfectly perfect for a rest or workout day because it’s super lean and Low-Carb! I paired this with a simple Spinach Salad topped with a home-made Honey Mustard Vinaigrette! Winner Winner…. Easy Muffin Dinner!!!

  • 1 lb. Extra Lean Ground Beef (96/4%)
  • 2 large cage free egg whites
  • 6 tbsp. of your Favorite Red Salsa (preferably one with the lowest sodium) – will be divided
  • 4 tbsp. Organic Ketchup – will be divided
  • 1/3 cup Gluten Free Breadcrumbs OR Quick-Cooking Oats OR 1 slice Ezekiel Toast (processed into breadcrumbs)
  • Olive Oil Cooking Spray


Cooking Utensils:

  • muffin tin
  • medium mixing bowl



  1. Preheat oven to 350F.
  2. Coat a muffin tin with Olive Oil Spray.
  3. Combine 4 tbsp salsa, 2 tbsp ketchup & egg whites in medium bowl. Mix this well!
  4. Then add your ground beef and oats (or breadrumbs) and mix well again.
  5. Evenly distribute your muffins, packing the meat mixture to the rim of each muffin spot. My batch made 10 muffins.
  6. Cook for 30 minutes and then remove from oven.
  7. Mix the remaining salsa and ketchup and add to the tops of each muffin. THAT’S IT FOLKS!!!


Macros for 1 of 10 muffins (no difference if you use Ezekiel breadcrumbs or oats):

Protein: 9.5 grams / Carbs: 4 grams / Fat: 1.7 grams

Approximately 75 calories
