- 1 Field Roast Mexican Chipotle Vegan Sausage link
- 1 cup Low Carb potatoes - see recipe below
- dark leafy greens
- cherry tomatoes
- fresh parsley
- Prepare the sausage as recommended on the package.
- In a separate pan, prepare the low carb potatoes: Vegans/vegetarians – use avocado oil and omit the bacon.
- Serve on top of leafy greens and top with diced tomatoes, avocado and fresh parsley!
Rest Day: Add olive oil and lemon as a light dressing for the salad.
