Ingredients

  • 1 Field Roast Mexican Chipotle Vegan Sausage link
  • 1 cup Low Carb potatoes - see recipe below
  • dark leafy greens
  • avocado
  • cherry tomatoes
  • fresh parsley

Directions

  1. Prepare the sausage as recommended on the package.
  2. In a separate pan, prepare the low carb potatoes: Vegans/vegetarians – use avocado oil and omit the bacon.
  3. Serve on top of leafy greens and top with diced tomatoes, avocado and fresh parsley!

 


Recommendations:

Training Day: Serve in a Siete Almond Flour Wrap or in an Ezekiel Sprouted Corn Tortilla. Both types of tortillas can be found at Whole Foods.

Rest Day: Add olive oil and lemon as a light dressing for the salad.
