Rosemary & Apple Whole Roasted Chicken

If you’re entertaining, this recipe is perfect because it only requires a few ingredients, there is minimal prep time and the end product could be featured on the cover of Food and Wine Magazine!

The comfort of warm soft apples are a great compliment to this chicken dish too! But no need to worry about blowing your calories, because a heaping serving of this delicious chicken and apples is under 170 calories.







Serving Size: 4 oz. chicken (yield after bone and skin removed) and 4 apple slices (1/2 an apple)
  • Protein - 19 g
  • Carbs - 11 g
  • Fat - 5 g


  • 1 whole organic chicken (2-3 lbs)
  • 3 Gala apples, cored and sliced
  • fresh rosemary (4-5 sprigs)
  • 1/4 cup balsamic vinegar
  • 1/4 cup grapeseed oil
  • 1 tbsp himalayan salt

Cooking Utensils

  • 1 roasting pan or baking dish (9 x 13)
  • knife
  • cutting board


  1. Preheat oven to 350F.
  2. Rinse the chicken and dry with a paper towel.
  3. Lay 1-2 rosemary sprigs in the pan, then proceed to place the chicken on top of the sprigs. And add the remaining sprigs to the chest cavity.
  4. Drizzle the chicken with grapeseed oil and massage it into the skin. Repeat with the balsamic vinegar.
  5. Add apples to the chest cavity and place the remaining around the chicken in the pan.
  6. Sprinkle with salt.
  7. Bake for 90-95 minutes until chicken has browned on the outside.
  8. Serve over your favorite side item and ENJOY!
