Low-Carb Yum Yum Meatballs

🥢 Asian-inspired flavors packed into a delicious little meatball!

🙋🏻‍♀️ I promise that you’re going to enjoy the fruits of your labor with these SIMPLE honey-lime 🍯 bites that require just a few ingredients and one pan.

Serving Size: 4 meatballs

Ingredients

  • 1 lb. grass fed beef or organic turkey (90/10)
  • 1 free range egg
  • 1/2 cup almond meal
  • 3 teaspoons gluten free Worcestershire
  • 1 teaspoon minced ginger
  • 1 teaspoon red pepper flakes
  • 2 tablespoons fresh lime juice (from 1 lime)
  • 3 tablespoons Coconut Aminos
  • 3 tablespoons organic unfiltered honey
  • avocado spray
  • garnish: diced green onions, toasted sesame seeds

Cooking Utensils

  • large mixing bowl
  • large nonstick skille

Directions

  1. In a large mixing bowl combine ground meat, egg, almond flourworcestershire, ginger and red pepper flakes. Mix well. Form your meatballs and set aside. My batch made 26 bite-size pieces.
  2. In a separate small mixing bowl, combine lime juice, coconut aminos and honey.  Whisk until honey is evenly distributed. The sauce will not be thick in consistency. Pour 3/4 of the sauce sauce over the meatballs making sure that all meatballs have been coated. Set this aside.
  3. Coat nonstick skillet with avocado spray and turn to low/med heat. Add the meatballs and cover with lid. Let meatballs cook for about 5 minutes, then flip them so they are evenly cooked. At this time, add the extra sauce that was left-over in your mixing bowl. Cover the meatballs and let cook for 6-8 more minutes. Once fully-cooked, turn heat to low until ready to serve! Garnish with chopped green onions and toasted sesame seeds

Training Day: serve with organic or sprouted basmati rice

Rest Day: serve with cauliflower rice or over dark leafy greens

 

Substitutions:

  • For a paleo/whole 30 version, omit worcestershire
  • Braggs liquid aminos for Coconut aminos
  • ground chicken for ground beef
  • gluten free panko for almond flour
