- 2 medium organic cucumbers peeled, seeded, and chopped
- 2 medium tomatoes chopped (or 1 1/2 cups diced cherry tomatoes)
- 2 medium jalapeño peppers, seeded and chopped
- 1/2 medium red onion, chopped
- 1 tbsp minced garlic
- 2 limes, freshly squeezed
- 2 tsp fresh parsley, finely chopped
- 2 tsp fresh cilantro, finely chopped
- 1/2 tsp sea salt
- optional - 1 avocado, pitted and diced

Combine all ingredients in large bowl. Serve with cucumber slices, Siete grain free chips or by the spoon!
