4-Ingredient Carnitas Sliders

This one is for the books 📚. Carnitas for ALL!

 

What you need 💁🏻‍♀️: 25 minutes, 1 sheet pan and a hungry belly.

  • Protein - 21.6 g
  • Carbs - 15.7 g

Ingredients

  • 1 organic large sweet potato, sliced into 1/4" rounds
  • 1 tablespoon olive oil or avocado oil
  • *8 ounces ready-made carnitas
  • *2 individual Wholly Guacamole packs

Cooking Utensils

  • baking sheet
  • optional - slow cooker/instant pot

Directions

⏲ Time-Saving Recipe:

  1. Preheat oven to 400F. Slice sweet potato into even rounds about 1/4″ thick. Lightly coat with oil and bake for 20 minutes or until semi-soft. No need to flip.
  2. As sweet potatoes are roasting, follow the heating directions for ready-made *Carnitas (see note). Set aside.
  3. Once potatoes are ready, allow to cool for a few minutes then distribute guacamole evenly over all of the sliders ~ 1 tbsp per slider. Top with carnitas and any additional condiments like tomato or red onion.

*Vegans/Vegetarians: Jackfruit is a great alternative. You can find this at Publix, Walmart, Sprouts & Whole Foods.


 

Slow Cooker/Instant Pot (Whole 30) Recipe:

  1. Carnitas – Season with a light layer of sea salt. With a knife, make holes in the pork butt (2-3 pounds) and place a garlic clove in each hole (6-8 cloves). Line the base of a Slow Cooker or Instant Pot with 5-6 bacon slices, then place the pork butt on top of the bacon. Add 1/4 cup fresh lime juice, 1 tbsp cumin and 1/4 cup cilantro. Slow cook on low for 8 hours OR press “Manual” on Instant Pot and set for 120 minutes.
  2. Sliders – Preheat oven to 400F. Slice sweet potato into even rounds about 1/4″ thick. Lightly coat with oil and bake for 20 minutes or until semi-soft. No need to flip.
  3. Guacamole – combine 2 avocados, 1/4 diced red onion (optional), 1 tsp garlic powder, juice of 1/2 lime, salt and pepper. Mash with a fork and give it taste test. Adjust spices accordingly.
  4. Once potatoes are ready, allow to cool for a few minutes then distribute guacamole evenly over all of the sliders ~ 1 tbsp per slider. Top with carnitas and any additional condiments like tomato or red onion.

🔹Carnitas

Spouts: I found this 14-ounce package at Sprouts in their ready-made section. You can also sub for Turkey Carnitas or shredded chicken. For Vegans/Vegetarians use Jackfruit (as mentioned above)

Sams: Your local Sam’s may carry this package.

Costco: Check instant-cart for this one!

🔹Guacamole

Packets like this are perfect. Costco, Publix, Sams or any local market should sell them!
