Serving Size: 1/4 entire serving - toppings not included
  • Protein - 24 g
  • Carbs - 1 g
  • Fat - 17 g

  • 2 tsp avocado oil or grapeseed oil
  • 1 lb grass fed ground beef (sub for turkey, pork or chicken) - I used 85/15 grass fed beef
  • 1 tbsp fish sauce - I used Red Boat Fish Sauce (sub for Worcestershire)
  • 2 tbsp bone broth (sub for water of beef broth)
  • 1 - 2 tbsp Sriracha - depending on how much heat you like
  • juice of 1 lime
  • zest of 1 lime
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup fresh mint, chopped
  • Organic Butter Lettuce (sub for Romaine or Iceberg Lettuce)
  • toppings - red bell peppers, red onions

Cooking Utensils

  • 1 large non-stick skillet or Wok
  • 2 small mixing bowls

1. Turn skillet/wok to med-high heat and add the oil.  Then add ground meat of choice and cook until it’s cooked through and starting to brown, breaking it apart as it cooks.
2. While the meat is cooking, make the Sriracha mix: combine the fish sauce, broth and Sriracha in a small bowl.  Mix well and set aside.
3. Zest the skin of one lime and squeeze the juice into a small bowl.
4. When the beef is done (you may need to drain excess fat depending on the %), add the Sriracha Sauce mixture and let it sizzle until the liquid has somewhat evaporated, stirring a few times to get the flavor mixed through the meat.
5. Turn off the heat and stir in the lime juice, lime zest, sliced green onions, and chopped mint. Mix well.
6. Serve meat mixture with lettuce leaves and top with red peppers and onions!
Rest Day – Enjoy with sliced avocado
Training Day – Enjoy with a side of basmati rice or sweet potato noodles.
Notes –
*If you have never used fish sauce before, not to worry. This was my 1st time using it and I was pleasantly surprised with the subtle meaty flavor. From my experience, when it is incorporated with all of the flavors, there is absolutely zero fishiness! You can find Red Boat Fish Sauce at Whole Foods or Sprouts.
*Leftovers – Can be stored in an airtight container for 3-4 days. Best served fresh.
